This Greek-ish inspired baked rice can be turned it into three very different recipes so you don't get bored. It’s packed full of tomatoes, olives and peppers so you can get your veg count up, plus I’ve bulked it out with a few extra.

Added a healthy heap of garlic powder & salt after plating bc the flavor fell flat. Made it with the garlic chicken. I agree w the other comments, this needs a little more spice & brightness. I may try some lemon & harissa next time.

Hey Tristan! Thanks for giving this one a go, sorry to hear it didn't hit the spot this time, we'll take a look at the seasonings in this recipe.

6.5/10. decent, but I still wanted to more brightness and complexity, even though I added some diced preserved lemons (which I recommend)

Really good base, don't underestimate the size of the pan you need. We made 8 portions to use throughout the week and it just squeezed into a 5.1 litre casserole pot (minus a little stock)

This turned out nice but I agree with the other comments that it may be missing something. Mine tasted slightly bland and I could just about taste the tomatoe. I added italian herbs and paprika but I think it could have done with something even more extra. Otherwise nice and healthy, easy to make. Will make again with more seasonings and perhaps more tomato paste. Went well with the chicken recipe

I quite liked this dish. To enhance the flavor, I added some dollops of red pepper bruschetta, as well as 3-4 table spoons of the olive juice. I also needed to keep mine in the oven about 15 minutes longer than stated in the recipe in order for the rice to absorb the liquid.

Needs a bit more in the seasoning department- I found it distinctly lacking in flavour

Not the best one on here. Mine turned out pretty stodgy and flavourless, but maybe that's just me.

Do you think this could work with tuna? I have memories of what I called Spanish rice when I was young and it sounds similar but was with tinned tuna

Hi Sarah, you could add tuna if you like. We'd recommend baking the rice first then stirring through the drained tuna before returning to the oven to crisp up for 10 mins. Enjoy!

Hi Michael! There was an error in the ingredients list stating 100g green olives where it should be a mix of green and black. We've fixed this now – thanks for the feedback!
