Broccoli, Chilli and Lemon Pasta
This pasta is made with ‘twice-cooked’ broccoli (ripassate in Italian) it’s quickly boiled and then fried with olive oil, garlic and chilli for a simple dinner.

I've tried this recipe several times now and can never get the broccoli to the saucey consistency in the pics unless I add creme fraiche :(

Hi Kirsten! The way to do it is to make sure the olive oil, lemon and pasta water emulsify together. If it's looking less saucy for you, add more pasta water and olive oil and it will come together.
