A herby, lemony, sumac-y giant couscous bowl with crispy halloumi and toasted pine nuts. This one is full of nutrients but really satisfying. Chuck the leftovers into a container and reheat in the microwave the next day for an easy lunch.

    Made this tonight, and loved it. I added a bit more garlic because I'm certainly a more is more kind of guy with garlic, and I also added some diced cucumber tossed through for a bit of extra crunch and freshness. Will definitely be adding to my regular Summer rotation as it starts to heat up here in Australia!

    I did everything in one pan.. toasted pine nuts in it first, then cooked the onion and garlic, then the spinach, then halloumi... I drained the spinach then used the leftover liquid to cook the cous cous in. Great recipe!

    I couldn’t find giant cous cous in my local so I used orzo instead - it was delicious! Great for meal prep as it was delicious both warm and cold

    This one missed the spot for me. As I was serving it up I felt there was something missing. It tasted good, but got a bit samey as I ate it, with the occasional lump of halloumi adding interest.
