My very first Mob recipe. Super impressed as it is invigoratingly delicious. Only addition was the juice of an orange to the chipotle marinade and a sprinkling of tajín on the pickled red onion. Has me feeling warm and nourished!

This looks great but one of my sons doesn’t like anything spicy… he loves interesting flavours but not the heat… any suggestions?

Hey Helen! Skip the salsa and replace half the amount of chipotle paste with tomato paste. You should still get the smoky flavour but less of the heat :)

Absolutely delicious. Didn't have the salsa so left it out but think it could probably due with being subbed with some blended jalapenos or normal salsa so you have a bit of sauce/liquid.

Soo good! I subbed the chicken by marinating cubed tofu in the chipotle mix, tossing with some cornstarch, and baking. I also sliced some bell peppers and put it in with the tofu for extra veggies.
