I really liked this, but as someone else said watch the recipe if you're halving, for some reason the garlic and lemon quantities don't halve in the text. I'll definitely make this again - but might just use regular almonds!

This is so so good. The creamy beans go so well with all the lemon flavours, and it’s very fufilling to eat. I toasted my almonds, I used a bistro salad instead of watercress, I used panko breadcrumbs instead of a blitzed pita, and it was still verrrrrry very nice.

Oh my golly gosh... this recipe is AMAZING. We absolutely adored this. So much flavour from the pesto and beans.
We were a little confused when the recipe said 'drained butterbeans' and then 'chuck in your beans along with the liquid'- feels like you don't need to seperate them or state to drain them. We also only added salt to the breadcrumbs. We skipped adding the salt to the pesto and the beans. It was salty enough without extra salt!
All in all, a fantastic recipe. We treated ourselves to a jar of Bold Beans Queen Butterbeans for this recipe and they were divine. Would recommend.

Good served with pea shoots, tomatoes and mixed leaves. If reducing the recipe to 2 people, as we did, careful with the garlic in the pesto as it can dominate. Made my own smoked almonds with oil and smoked paprika- 20 mins in a hot oven, stirred halfway through.
