    When you throw it together at the end, every aspect adds a bit of complexity to the dish. I keep coming back to this one again and again as it's absolutely delicious. It's also great to make in bulk to feed a lot of vegetarians and vegans (without the halloumi/yoghurt).

    Quick, easy and tasty. But you might need an extra onion than is listed or I shouldn’t have pickled the whole red onion to start!

    This is one of those great recipes where the end result tastes like you’ve put so much more time and effort in than you actually did. A mid week staple!
