Step 1.
Heat the oven to 170°C fan.
Step 2.
Set a large pan of boiling water over a medium heat. Add the pearl barley and garlic clove and boil for 15-20 mins until tender, then drain and remove the garlic clove.
Step 3.
Toss the pearly barley in the olive oil in a large mixing bowl. Roughly chop the pecans and parsley and add them to the barley. Coarsely grate in the apple. Add the strained vegetables from the gravy including the dried mushrooms. Cut the bread into small 1cm cubes then add to the stuffing mixture. Mix really well to combine then season well to taste with salt and plenty of black pepper.
Step 4.
Rub a large baking dish (approx 22 x 16cm) with olive oil. Transfer the mixture to the dish then lay the sage leaves on top and drizzle over a little olive oil. Slide in the oven to bake for around 30 mins until firm to touch, lightly golden brown and piping hot throughout.
