Caramelised Soy Chicken in Garlic Ginger Broth with Rice
This recipe is heavily inspired by a soy-glazed roasted version of a chicken dish which Chloe ate at a Hainanese chicken place in Kuala Lumpur. Now, this is in no way authentic, but you have got to try it.

So delicious and easy! I did struggle with trying to crisp up the chicken vs keep the sugar of the kecap manis burning on the pan, so I made a a pan sauce at the end with the chicken fat, garlic cloves from the broth, left over marinade and some corn flour which I then poured over the chicken

Made last night was so so tasty. Going to make on the regular for sure. I used dark soy mixed with Sriracha and honey in place of the Kecap Manis

What is Kecap Manis? Just sweet soy sauce?

Hi! Yes, its an Indonesian sweet soy sauce. It's thicker, a bit like a syrup consistency.
