Hi Lauren. We've recommended serving this to 4 people as 1.5 enchiladas will be enough for most. You could up it to 2 per person if you're hungry!

These are the BOMB, we eat them every fortnight and it's our go to lazy dinner if you have a rotisserie chicken. They pack well for lunches the next day as well! 10000% recommend

Took a while to make but this is absolutely delicious and very filling. I added less cheese and subbed sour cream for Greek yoghurt to make it a touch lighter.
