Lovely pancakes, I think using a smaller banana may keep the moisture levels down, but they were tasty regardless and as easy to cook as any scotch pancake.

A great breakfast recipe, fairly quick and easy to make. The recipe definitely needs extra oats, we used 80g in total split between two people.

The oats as flour is a nice idea but not enough to keep the mixture together when flipping in the pan. It ended up being a bit of a sloppy mess. I fixed this easily by adding a couple of tbsp of plain flour. I’d also suggest using overripe bananas so that it’s a little sweeter. The cottage cheese makes it quite tangy.
