Crispy Gnocchi Caesar Salad
Step 1.
For the dressing, finely grate the garlic into a bowl. Add ½ the anchovies and mash with a fork to create a paste then stir through the mayo, mustard, the juice of the lemon and ½ the grated Parmesan. Season with salt and pepper. If it’s too thick, stir through a splash of cold water.
Step 2.
Roughly tear the lettuce and pick the parsley leaves (discarding the stalks) then toss with the rocket.
Step 3.
Heat a frying pan with a drizzle of olive oil or some butter as you prefer. Once hot, add the La Famiglia Rana Garlic & Mozzarella Filled Pan-Fry Gnocchi and pan-fry for at least 5 mins until crispy and golden.
Step 4.
Toss the salad mixture into the dressing, with the remaining anchovies, capers, and remaining grated Parmesan. Share between plates and top with the crispy gnocchi.
