Step 1.
Make the Slow-Roasted Curried Coconut Chicken batch recipe.
Step 2.
Squeeze the garlic bulb into a bowl and mix the mayo through.
Step 3.
Halve the marinated tomatoes and roughly chop half the cooked onions. Add both to a bowl, zest over ¼ of the lime and squeeze over the juice. Toss together then taste and season with salt, if needed.
Step 4.
Shred one chicken breast and the wings, discarding any bones. Toss through the onion mixture.
Step 5.
Slice the focaccia pieces in half and then toast them. Spread the mayo onto the cut sides, top with baby gem leaves, chicken salad and crispy shallots. Sandwich together.
