Before you begin, make the Aubergine Alla Norma.
Step 1.
Bring a saucepan of salted water to the boil. Add the giant couscous and cook according to the pack instructions. Drain, then rinse under cold water until cool.
Step 2.
Meanwhile, pick the basil leaves and tear them into bite-sized pieces.
Step 3.
Tip the cooked couscous into a bowl with the aubergine alla norma. Season with salt and black pepper, then splash in some balsamic vinegar to taste.
Step 4.
Fold through the rocket and basil, then spoon onto plates. Crumble over the feta and finish with a drizzle of olive oil.
