The nutritional value of this is way out… unless it’s 400g cooked quinoa and not dried, because it was way too much and the calories of these ingredients would make it more like 900kcal per portion

This was super easy and quick to make! I made it with 100g less of quinoa. Would make again.

This was tasty but once I put it together, it felt like I needed more ingredients or vegetables in it.
If i made it again, I'd add some more green veg in maybe (possibly spinach). I also made 4 portions out of the "2 serves" size and added an egg for some more protein which worked well.

Hey Melissa! Glad you loved this! Totally fair if you want to increase the greens spinach would work really well. If you want a smaller lunch then making 4 portions out of this recipe is also a great shout .

This was really nice. I used 500g already cooked quinoa, it was a good, generous portion. The dressing was great and really made it, if I made again I might just use 1 or 1.5 lemons, it was really zingy.

Was yum! It was a bit too much quinoa for me - I think next time I would do about 100g less and maybe add a can of chickpeas. I didn't have enough halloumi so substituted half with feta. I also added a small garlic clove to the dressing.

i also added some chopped cucumbers on the top for extra freshness and that was soo good
