Step 1.
Make the Roast Chicken with Schmaltzy Courgettes.
Step 2.
Bring the chicken stock to the boil in a large saucepan. Add the rice and cook, stirring, for 10-12 mins until soft.
Step 3.
Meanwhile, shred the leftover chicken and finely chop the dill and parsley.
Step 4.
Once the rice is cooked, stir in the chicken and courgettes. Simmer for another 2-3 mins until everything is piping hot.
Step 5.
Squeeze in as much lemon juice as you like, then stir through the chopped herbs. Taste and season with salt and black pepper.
Step 6.
Ladle into bowls, drizzle over a little olive oil and serve with a wedge of lemon.
