Step 1.
Place a non-stick frying pan over a medium-low heat and add the butter. Thinly slice the garlic, add to the pan and cook gently for about 2 minutes until softened but not browned.
Step 2.
Meanwhile, finely chop all of the herbs and set aside.
Step 3.
Lightly beat the eggs in a bowl and stir in three-quarters of the herbs. Pour into the pan and crumble in three-quarters of the feta. Cook gently while stirring all the time until the mixture is just set – you want soft, silky curds.
Step 4.
Plate up, or pop straight on top of some toast. Finish with the remaining herbs and feta, the smoked paprika and a good drizzle of olive oil.
