Step 1.
If you're making the breadcrumbs, remove and discard the crusts from the bread, then tear them into small chunks and blitz in a food processor to create fine-ish breadcrumbs.
Step 2.
Add the butter to a medium frying pan set over a medium heat. Allow it to melt and begin to foam, then add the breadcrumbs and stir, coating them in the butter. Stir often for 3-4 mins until the bread starts to turn light golden. Add the sugar and toss to coat again, then stir constantly for another 2 mins until they are golden brown. Tip onto a plate, then sprinkle with a little sea salt and allow to cool.
Step 3.
Pit the dates, transfer to a microwavable plate and microwave for 30 seconds on high. They might need a little longer, depending on your microwave.
Step 4.
Scoop balls of ice cream into bowls, then add a date or two and some cherries to each one, if using. Top with the breadcrumbs and a small drizzle of your best extra virgin olive oil.
