A vegan recipe for mac and chickpeas that's a great alternative to mac and cheese.

Drained Cooked Chickpeas
Vegetable Stock
Sourdough
Rosemary
Garlic Powder
Salt
Black Pepper
Extra Virgin Olive Oil
For The Cheesy Sauce:
Cashew
Salt
Silken Tofu
Cornflour
Nutritional Yeast
Ground Turmeric
Miso Paste
Lemon Juice
Black Pepper

I loved the look of this but I am not vegan so would appreciate a version without the vegan sauce. I've no interest in blending up cashews or buying tofu or nutritional yeast (would make it very expensive). Dairy alternative sauce would be appreciated

hi! confused about the breadcrumb step. Do we not toast them first? We pop it over the meal as is and put the whole thing in the oven? if so, for how long?

spread the crumbs on top and switched on the broiler for 2 min! Perfect!!

Hi Jennifer, yes you can freeze this after assembling (near the end of step 7). Then defrost fully and roast/slide under the grill as described.

Very delicious and was appreciated by non-vegans. Two slight modifications made: I replaced one can of chickpeas with about 8oz of cooked macaroni (to lend more of a 'mac & cheese' feel) and added in a couple extra tbsp of nutritional yeast for an extra-cheesy feel. I also think I accidentally added in a tad too much lemon juice so be mindful of that!

What do we do with the squash (pumpkin) seeds?

You can roast them! Clean and dry the seeds then season and roast in the oven. You can then use them as toppers on dishes or eat them as a snack.
