Before you begin, make the Spicy Lamb Meatball Traybake.
Step 1.
Peel and finely slice the red onion. Add to a bowl with a pinch of salt and the sumac, then scrunch with your hands to soften. Set aside to marinate while you prep everything else. Pick the parsley leaves and stir them through the onions just before serving.
Step 2.
Add the tomato purée to a saucepan with a drizzle of olive oil. Set it over a medium heat and cook for 3–4 mins until darkened and sticky. Tip in the meatballs and roast veg, along with 100ml water. Simmer for a few mins until hot and slightly thickened. Taste and season with salt, if needed.
Step 3.
Spoon the hummus into shallow bowls and use the back of a spoon to spread it out. Top with the hot lamb mix and a generous pile of the sumac onions.
Step 4.
Warm the flatbreads in a dry pan or directly over a flame until soft and charred. Serve alongside for scooping.
