A clean, fresh frittata. The basil, lemon and ricotta keep it really light. Lovely little lunch.

Made this tonight and it was great but it stuck to my stainless steel sauté pan. Any tips?

Hi Nathan! Stainless steel pans need to be properly preheated to ensure non-stickiness. Place the dry empty pan onto the heat and leave it for a couple of minutes before using. You can test whether the pan is ready by dropping a few droplets of water in, the water should bead and dance around the pan rather than evaporate immediately. then proceed as you would with the recipe.

Thanks. I know how to use a stainless steel pan. Are you suggesting the need to pre-heat the pan right at that start? I did this and after cooking the courgette and onion I think the moisture levels mean once you add the egg, it’s gonna stick. Or are you suggesting mixing the cooked ingredients in a bowl with the egg and then adding back to a preheated oiled pan? Ie. At step 4

Hi again Nathan! Here's an amended version of step 4 for you and others using a stainless steel pan: "Take your courgettes off the heat and add them to your eggs and mix together. Chop up your basil (leave some for garnishing) and add to the egg mix. Next, grate in the zest of your lemon. Place the stainless steel pan back onto medium heat until properly preheated, then pour the mixture into it."
