One-Pot Baked Orzo With Artichokes & Chickpeas
I love a one pot number, especially when it’s got all of the elements to make a full meal in one. All of the flavour from the artichokes, pesto and shallots get absorbed by the orzo to make this really delicious dish.

Took ages to cook, and we were pretty underwhelmed with it. Only really tasted of the lemon. Wouldn't make it again.

Didn't have all the ingredients but used butter beans instead of chickpeas and vegetarian parmesan to finish rather than cream cheese. Very tasty and super easy...as you can see, the dog approved, though he didn't get any leftovers!!
