Really simple and easy to make, perfect for a midweek dinner! The ricotta is great for balancing the salt of the sardines and anchovies and the vinegar of the capers. Frying the capers really adds nice texture to the dish.

I liked this pasta recipe, although 500g of pasta for 4 portions feels a bit much - the leftovers are nice, but pasta gets soggy. I wasn't sure about the sardines quantity, so I used 3/4 of a tin since I didn't mind extra protein and fish. I also added a handful of thinly sliced green olives to the sauce and it worked well.
