I also thought I spotted shallots in the video so I added 2 halved shallots to the roasting tray and was glad I did. After roasting I poured the pan jus into a blender and added several of the roast garlic cloves along with the roasted shallots and a splash of chicken stock and it made an incredible sauce to drizzle over the chicken. Absolutely loved this one. The bird & the beans were great but that snap pea salad was exactly what I needed to remind me spring isn’t so far away!

I thought this. Mob’s Instagram video looks like it has shallots. And it looks like the chicken is partially roasted before adding the capers, lemon, garlic for the last half. Very odd!
