A bit of a treat but super simple, pistachio pesto tossed through spaghetti with spicy prawns and lemon. Indulgent but easy, just what we like.

Subbed half the pistachios for cashews (because pistachios are so expensive at the moment!) and half the basil for spinnach so I didn't decimated my basil plant. Worked great!

Very tasty. I substituted the basil, with a mixture of spinach, rocket and watercress (a salad bag 😊) which added a different dimension.

Hi Jess, yes that would be delicious! You could either chop them up for a similar texture to the photo, or have them whole for a chunkier texture.
