A good one! I adapted it so I could serve it to the whole family including the baby by leaving the red curry paste out of the meatballs (and adding some lemongrass onion and garlic for flavour substitute), then when the sauce was done I fried the curry paste in a separate pan and added the grownup half of the sauce to that. Popular all round!

Really tasty, the sauce is very rich so I added a bit of lime to it, I’ll definitely make again and it was budget friendly

few edits/notes: 1) the proportion of bread crumbs gives the meatballs a very dense meatloaf-like texture, if you're not into that i think reducing the amount of breadcrumbs would help. 2) i would sub jasmine rice (more commonly used in thai recipes) for basmati. 3) the sauce is very rich but not super flavorful--i added some lime juice for acid and punched it up with some sambal oelek. i also simmered the meatballs in the sauce (i used more coconut milk, about 2x as much as it reduces down) and i think this helped all the flavors come together and kept the meatballs moist while making sure they cooked through. i ran out of red curry paste but i might also add some to the sauce next time to give it more flavor.

Delicious recipe. The meatballs are.so light and fresh. We added lime juice to the sauce for extra freshness. We shall be trying more of Jodie's recipes 🤌

I substituted chicken mince for pork mince (my local supermarket was out of stock) and it came out amazingly!

I guess I am going to say this about all of Jodie’s recipes, but this one is soooo good. I did it multiple times but this photo was for when I was out of green beans so I added mushrooms and courgettes. It was still amazing.
