The flavours of this are nice, fresh…but it’s very dry! I doubled the quality of mayo to try and make it cohere but it remained dry despite the lemon juice, vinegar and oil, and doesn’t feel like it ‘smooshes’ together at all. I think if I made it again I’d want a lot more mayo or other combing wet ingredient in it.

We recommend rice vinegar for this one but you could use white wine vinegar or apple cider vinegar if that's what you've got handy
