Spiced Keema Jacket Potato

Sprinkle a baking potato with salt and pepper, lightly coat in olive oil, wrap in foil and bake for 1 - 1½ hrs at 200°C until soft and fluffy inside. Once baked, split open and serve keema mix generously on top, with coriander and a diced white onion garnish. Add grated cheese too, if you like.
