Step 1.
Make the Juicy Pulled Chipotle Chicken.
Step 2.
Thinly slice the red onion and add to a bowl. Squeeze over the juice of half the lime, season with salt and set aside to pickle.
Step 3.
Finely chop the coriander, saving a few whole leaves for garnish. Crumble the feta and have your guac and crispy corn ready.
Step 4.
Reheat the rice and chipotle chicken in separate saucepans until piping hot. Stir the chopped coriander through the hot rice and squeeze over the juice of the remaining lime.
Step 5.
Build your bowls: start with a layer of coriander rice, then add pulled chipotle chicken, crumbled feta, spoonfuls of guac, pickled onions and a good handful of crunchy corn. Garnish with coriander leaves and serve with a lime wedge.
